Exciting news for Hamburg residents and gourmets! The “Haerlin” restaurant in the elegant Fairmont Hotel Four Seasons made it and was awarded three Michelin stars. This is the first three-star award for the restaurant, which is now one of the two restaurants in Hamburg alongside “The Table Kevin Fehling” to achieve this high status. The team around chef Christoph Rüffer has worked hard for over 20 years to raise “Haerlin” from one to two and now to three stars. The Michelin inspectors particularly praised the “perfect compositions of top products in excellent balance” served to guests, highlighting the clear culinary ideas that preserve the identity of the ingredients despite technical sophistication.

The “Haerlin” impresses not only with its exquisite cuisine, but also with its elegant atmosphere and professional service. The menu offers a carefully curated six-course set menu that includes creative dishes such as saddle of venison with hamburger bacon, beetroot and balsamic cherries. Guests can also swap or add dishes themselves to create their own individual experience. The impressive wine list also offers a variety of high-quality wines that pair perfectly with the food, some of which are also served by the glass.

The Michelin Guide 2025: An Overview of the Stars

The new one Guide Michelin Germany 2025 provides a lot of changes in the way stars are awarded. In Germany, a total of 341 restaurants can now look forward to a place in the renowned guide, including 12 with three stars. In addition to “Haerlin”, the second new restaurant at this level, “Tohru” in the Schreiberei in Munich, will be presented. In total, the number of new 2-star restaurants rose to 47, while 282 restaurants received one star. “GLORIE” and “Heimatjuwel” in Hamburg were recently awarded one star.

The awarding of “Green Stars”, which recognizes restaurants for their sustainable practices, is particularly pleasing. Eighty restaurants have received this star in Germany, including some Hamburg restaurants such as “Haebel”, “Landhaus Scherrer” and “Zeik”. New additions to the category for sustainable cuisine are “Heimatjuwel”, “Glorie” and “Klinker”, while the Gutsküche in Tangstedt also received a “Green Star”.

The Hamburg gastronomy scene is on the rise

The latest award for “Haerlin” is not only a personal success for Christoph Rüffer’s team, but also a sign that the Hamburg gastronomy scene is booming. “The Table Kevin Fehling” in particular has been awarded three stars for the tenth time in a row, showing that Hamburg is at the forefront of top-class cuisine. Award-winning restaurants such as “100/200 Kitchen”, “Bianc” and “Lakeside” have successfully defended their two stars, while other impressive new stars have been brought to the metropolis.

As Gwendal Poullennec, international director of the Michelin Guide, noted, there is a trend towards plant-based cuisine and a strong focus on regionality and seasonality. Hamburg's gastronomy scene not only attracts gourmets, but also offers exciting prospects for a sustainable future in the culinary world.
