A new era begins in Göttingen-Grone: Maximilian Leßner has taken over the traditional Proffen butcher shop. The specialist shop, which has been one of the few remaining butchers in southern Lower Saxony since it was founded in 1969, is now in the hands of the trained butcher who previously worked in Austria for some time and has been steering Proffen's fortunes since March 2025. Leßner brings a breath of fresh air to the butcher shop and relies on quality products from the region, as HNA reports.
Eberhausen is his home, where he grew up on a farm as a child. After his training, he began his career at the Sebert butcher shop in Göttingen before taking his master's examination and further qualifying as a food technician. His work is characterized by his love for the butcher's trade and his familiarity with regional products, which also attracts customers from the police and judiciary. Leßner not only sells classic meat products, but also offers roulades and goulash in cans and jars, another example of his focus on regionality and quality.
Crafts with a future
Leßner is also a man with visions. He sees great potential in the food trade and plans to create new jobs. The Proffen butcher shop currently employs almost 60 people, including many experienced people from the region. “We also train future butchers and butcher shop salespeople,” emphasizes Leßner, explaining how important the vocational school classes in Göttingen are to him. In view of the increasing demands on quality and documentation in the food trade, in-depth training is essential, as the butcher's trade emphasizes.
The Proffen butcher's shop is known for its hot processing of fresh meat from the region. With a clear motto - “Hot processing is our specialty, regionality, freshness and variety are our strength, making sausage is our passion!” – the company consistently follows the approach of only using the best materials. The animals come from regional farmers, including Martin Wellhausen from Lödingsen and Vieh-Becker in Lütgenrode, who are valued for their high quality. Slaughtering and cutting takes place in Barterode, while processing takes place in Grone, all in close collaboration with the region and its producers.
Commitment to the region
The path to quality for the Proffen butcher's shop has been proven by numerous awards. The butcher shop has been taking part in DLG tests since 2002 and has received several awards for its excellent work. The family business has developed from a small butcher shop with four employees into an important service provider for meat and sausage products as well as delicatessen and catering.
At a time when craftsmanship is under pressure, Leßner's commitment shows that there is another way. His claim to the highest quality, regional connections and the training of young talent is an important sign for the future of the food trade in southern Lower Saxony.
