Emotional farewell: La Cosa” closes after 18 years in Braunschweig!
Today the restaurant “La Cosa” in the Schlosspassage in Braunschweig says goodbye to its guests after almost 18 years. The owner Laura Lepizzera has decided to take a new professional path and leave gastronomy and self-employment behind. “I notice that gastronomy demands a lot of my life and I don’t want that anymore,” she says. At 41, she sees the ideal time for a change of perspective. Last Saturday, October 25th, many tears were shed on her farewell day as Lepizzera looked back on the many beautiful memories with her guests. Among them were prominent visitors such as Thomas Gottschalk and Gerhard Schröder, who represent the special splendor of the last few years.
Lepizzera will not leave the stage alone. Her three-person team, which includes her mother Maria Santiago, will also be leaving the hospitality industry. While her mother now goes into well-deserved retirement, the chef is looking for new opportunities outside of the restaurant industry. But the farewell is not the end, because a successor is already in the starting blocks. Renovation work is due in November to realize a new concept that goes in an Asian direction. The new restaurant is scheduled to open its doors in December.
The importance of succession in the catering industry
Succession in the catering industry is not an easy matter. It involves the handover of leadership positions and ownership to the next generation or new owners and is crucial to the continuity and success of a catering business. According to actova.de, well-planned succession is of central importance for the long-term stability and growth of a company. When hospitality companies address the challenges and opportunities of succession planning, they can ensure employee and guest satisfaction.
Gastronomy as such is an area that goes far beyond the mere preparation of food. It covers all aspects of human nutrition, from the art of preparation to the selection of products and the enjoyment of meals. The term “gastronomy” comes from Greek and describes the art of regulating the stomach. However, in the modern world, the understanding of gastronomy has changed to include new trends such as plant-based diets, sustainability and technological innovations, all of which contribute to meeting the demands of the consuming society.
A new beginning
The challenge that a new beginning in gastronomy brings with it remains undisputed. Nevertheless, catering businesses that adapt to changes in a timely manner have the chance to consolidate their market position and win new customers. The upcoming renovation of the former “La Cosa” shows that change is not only necessary, but also an opportunity to bring a breath of fresh air into the industry. When the new concept launches, it will be exciting to see how it is received by Braunschweig guests - could this be the start of an exciting chapter in the city's dining scene? Time will tell!
Overall, it is to be hoped that the transition phase will go smoothly and that the successors will preserve the values and culture of “La Cosa” while implementing innovative ideas. This will ensure that the gastronomy section of the Braunschweiger Schlosspassage continues to be alive and writes new stories for the years to come.
