Tassilo Pöter from the Hildesheim district has made it his mission to shake up the world of truffles in northern Germany. Together with his two truffle dogs, Soka and Leya, he combs the tree plantations to harvest the delicious autumn truffles. But earnings are not sufficient to meet growing demand - so the industry is planning for sustainable growth. But what makes truffle cultivation in Germany so special?
Truffles are more than just a delicacy; they are also protected. That's why professional cultivation is essential. Every year, restaurants import around 40 to 60 tons of truffles, while only about one ton is harvested in this country. Many see great potential here, and so around 60 truffle farmers, dog breeders and restaurant owners in Bad Iburg have come together to form a “truffle network”. The aim is to support each other and promote cultivation.
The role of truffle dogs
Truffle dogs play a crucial role in truffle hunting. They tear up the ground less than pigs and are easier to train. The training can take years; Leya has already learned to only display ripe truffles, while her four-legged colleague Soka is still in training. Pöter knows how important these dog friends are and invests a lot of time in their training.
When harvesting, it is not only crucial to find the truffles, but also to ensure that the spores remain in the soil. This ensures future crops can thrive. Pöter and his wife Stefanie Weber have been growing truffles in the traditional Osnabrück region for around ten years and are committed to offering farmers the opportunity to specialize in this lucrative area. “The yields are higher than with corn cultivation,” explains Pöter, showing the great potential that lies in this sector.

Last year, Pöter and Weber harvested an impressive 150 kilos of truffles. But their goal is ambitious: a future harvest of one ton. The prices for their valuable tubers fluctuate between 0.80 and 1 euro per gram and mainly find their way into fine restaurants.
